About Chef Vince:

It all started 44 years ago, when my dad and I were in the dairy barn working.   He asked me if I thought I could cook him some breakfast. I said yes, and off to the house I went.  To his surprise, waiting for him was a full breakfast of eggs, bacon, potatoes, and buttered toast from a 7 year old kid.   Just the look on his face said it all, he knew I was hooked on cooking.

I attended culinary school in 1979 and 1980.   Later, I cheffed for Ironstone Winery VIP dinner concerts, as well as catered weddings.  From 2004 to 2012 I taught cooking classes at the winery, as well.

Besides doing cooking demos and cooking classes at the Modesto Certified Farmers Market since spring of 2013, I have been delighting people with culinary excellence, in their homes, where my partner and I do 5 course meals for 8 to 12 people. My passion is cooking fresh, from farm to table.


Spring Fresh Cooking Class

March 20th 2015 – March 22nd 2015

The class and recipes will focus on the lighter side of eating.   After winter’s comfort foods, this is a way to start spring off with a bounce in your step.  Recipes will be based on available fresh ingredients, in part, as well as students interests.


Class Schedule:

Friday March 20th

1-3 PM  arrive

3 PM Happy Hour – get to know your fellow students and teacher

4-7 Dinner Class

7 PM Eat!

Sat March 21

7:30-8:30AM A simple breakfast will be prepared for you

9-12 Lunch Class

Noon – Eat!

1-3 Free time to explore the beauties of Kowana Valley

3-6 Dinner Class

6 PM Eat!

7PM Free time (Games, walks, stories round the campfire)

Sunday March 22

7-8 AM Light Continental Breakfast

8:30-11:30 AM  Brunch Class

Noon Brunch

Afternoon: Tours of Kowana Valley, history, alternative energy systems, wild edibles, sustainable forest.

Late Afternoon: Head Home

Cost – below are the various options (all prices are per person and include all meals and 4 workshop classes – two lunch classes and two dinner classes):

Sleeping off site : $200

4 person Dorm  Bed, shared bath: $260

2 person shared room with private bath Double Bed  $290  (There is a queen and a double bed in each private room)

2 person shared room with private bath and Queen bed $330  (There is a queen bed and a double bed in each private room)

Queen bed in private room with private bath $290 per person (with occupancy of two) (for couples)

While we can not serve alcohol, students can bring their own for pairings, based on recommendations of Chef Vince.
